Chicken maqlooba

Ingredients

අවශ්‍ය ද්‍රව්‍ය

Ingredients for marination 

* 600gChicken 

* 100gYoghurt

*1 tbsp Ginger and garlic paste

* 3 tbspGaram masala

* 2 tbspChili powder

*1 tsp Turmeric powder

* 1 tspCumin powder

* 1tspPepper

* 2 tspSalt, 

* 1cube Chicken Seasoning cube

* 2 tbsp Lemon juice



Other ingredients 

* 3 tbsp Oil

*3 tbsp astra margarine 

*1 tbsp Ginger and garlic paste

* 2 Star Anise

* 2 bay Leaves 

* 3 Mediums Cardamom

* 3 cloves 

* 1StickCinnamon

* 400g onion 

* 500gTomato 

* 2tbsp Chili powder

* 0.5tspTurmeric powder

* Coriander leaves

* Mint Leaves 

* 0.5tbspOrange food coloring

* 600g  basmathi rice

Instructions

සාදාගන්නා ආකාරය

1) Marinate the chicken using all the ingredients mentioned for marination. Keep aside for 1 hour 


2) add basmathi rice, salt and astra margarine to boiling water and cook the rice.


3) Place a pot on a high heat stove with oil.


4)Add 1 tbsp of ginger / garlic paste into this


5) Add in the Star anise, bay leaves, cardamom, cloves and cinnamon stick into it.


6)When golden brown; add in chopped onions and diced tomatoes


7) add all the spices mentioned for the rice (chilli powder, coriander powder, Cumin powder, Garam Masala powder and Turmeric.


8) Add the marinated chicken, mint leaves, coriander leaves.


9) Close the lid and let the chicken cook in medium flame for about 10 minutes.


10) When the chicken is cooked add the cooked ghee rice into it and add in few drops of orange coloring.


11) Add mint leaves, coriander leaves and fried onions few and close the lid and Keep at low flame for 15 minutes.



Serve hot and enjoy.
