For the Malai Dough
2 Cups Milk Powder
3 Tablespoons Astra
1 Teaspoon Bakingsoda
2 Eggs
For the Milk mixture
2 Tablespoons Astra (for milk)
2 Cups of Milk
1/2 Cup Milkmaid
4-5 Cardomons
1 Teaspoon Safforn
1/4 Cup Mixed Nuts ( Cashews, Almonds, Pistachio)
2 Tablespoons Astra (for frying nuts)

Step 1 (prepare the Milk mixture)
In a pan add 2 Tablespoons Astra once it melts add 2 Cups of Milk and 5 crushed Cardomons and keep it to boil, once the milk is getting boiled add the 1/2 Cup of Milkmaid and boil until the Milk gets thicken once the milk is thicken add the saffron along with mixed nuts give it a mix and off the stove
Step 2 (prepare the malai dough)
In a bowl add 2 Cups of MilkPowder, 1 Teaspoon Bakingsoda and give a mix after that add 3 Tablespoons Astra and mix with the hand until the Milk Powder and Astra comes together in to a crumbled dough after that add 2 whisked eggs and make a smooth dough and make small sized balls and cover keep it for 15mins to rest
Step 3 ( final step preparation of rasmalai)
Take the Milk mixture which we prepared earlier keep in stove and make it boil agaon in low heat meanwhile the milk is boiling take each malai balls and make it flatten with the plam in to a nice shape and put one by one in to the boiling milk mixture (do not add all together) and close the lid and let it boil for 5 -10 minutes (until the malai gets cooked in the milk)
Off the stove and keep it for cool
Your beautiful yummy Rasmalai are ready!
You can have it hot or chilled either way
